Avocado

Catchy title, huh?
If you are anything like me, if you hear  see the word Avocado you automatically HAVE to pay attention.. Or is that just me?? 

I freakin' love an avocado... and a tomato... and anything semi-mexican... and salad.. So when I ran across this recipe on pinterest I knew it was a MUST MAKE.. IMMEDIATELY. And as always, I was not disappointed. So I feel that it is my civic duty to pass this along to the masses.

Allow me to introduce to you the 
SOUTHWESTERN CHOPPED CHICKEN SALAD


SALAD
2 cups shredded chicken
1 green bell pepper, diced
1 can black beans, rinsed
1 can sweet yellow corn
2 roma tomatoes, diced
Bunch of green onions, chopped
1 head ice berg lettuce, washed and chopped
1/4 cup cilantro, chopped
2 ripe avocados, diced
1 cup crushed tortilla chips

DRESSING
1/2 cup mayonnaise
2/3 cup Greek yogurt
1 tbsp ranch seasoning
1 tbsp taco seasoning


DIRECTIONS
Boil Chicken.
Shred Chicken.
Chop, Dice & Mix all Salad Ingredients.
Make Dressing.
Mix the Salad and Dressing Together. 
Enjoy.

I do have to say that this makes enough to feed a small army and takes a little time with all of the slicin' and dicin', but it is  super simple and delish!

Instead of the crumbled chips, I will be serving mine in a taco salad shell next go round!
Can't go wrong with that. And that dressing? It would make a delicious dipping sauce for some fried chicken... And I bet if you left off the lettuce, it would make a great dip with some Tortilla Scoops! Endless possibilities folks!
