Veggie Overload

This past week, we have had an over abundance of squash, zucchini and cucumbers sent to us by my parents... strait from the garden!! There's no way I was letting them go to waste, but when I say there was a lot, I mean a lot. In the last week, we have had squash and zucchini 5 times, have made 12 jars of pickles with the cucumbers and have the rest soaking in venegar.

How in the world do you cook squash and zucchini 5 ways, you ask? Grilled, Easy Cheesy Zucchini Bake (Kendol loved!), Zucchini Casserole (I loved!!), Shish-ka bobs and last but not least a spaghetti sauce concoction. While you can never go wrong with grilled veggies, out of the other three attempts the spaghetti sauce concoction was the best. I guess it could be considered a Veggie Parmesan... Yea, we'll go with that.

Veggie Parmesan
1 Jar of Spaghetti Sauce 
(Prego Traditional is the bomb... just sayin..)
1 Large Zucchini
1 Large Squash
Parmesan Cheese
Mozz Cheese
Salt
Pepper

Slice your veggies. Pour a little sauce in the bottom of your baking dish to keep anything from sticking. Throw in your veggies. Salt & Pepper. Cover with a little bit of both cheeses. Cover with the rest of the spaghetti sauce. Sprinkle a little more cheese on top. Bake for 45 minutes on 350. Serve with garlic bread (duh!).

This particular amount made about 3 big servings at our house. Feel free to add in as much squash and zucchini as you want! (Remember it shrinks) I may even throw in some hamburger meat next time!! Can't go wrong.

I may be biased bc I love anything with a tomato sauce and cheese, but this was delish!! We ate the entire dish in about 5 minutes........ and very low cal. 

Now I just have to wait... for the tomatoes  and sweet G90 corn to be ready.
I can already taste the bacon and tomato sandwich now.

  1. Yum! I have been hitting up the Farmer's Markets lately because I love fresh veggies! I have been on the hunt for strawberries but maybe they are out of season in Colorado.. I have no idea haha.

  6. Ahhh you just reminded me that I have zucchini I forgot about!

    My mom makes a similar dish but without the sauce, just lots of cheese. I'll have to try this recipe :)
