Need I say more?

I just have to share these two super quick and easy recipes that I found on Pinterest (duh). Both were hits with Kendol. And if Kendol approves, that means it's good. He's pret-ty snobby about his food!!! 

Seriously, these could not be any more delicious or simple.

Tailgate Dip
(I mean anything with this name has to be delish, right??... Is it football season yet??)
16 oz. Cream Cheese (Softened)
1 Can of Corn (drained)
1 Red Bell Pepper
2 Jalapenos (remove seeds)
1/2 Can Dice Olives
1 Ranch Packet
Wheat Thins

Chop bell pepper and jalapenos.
Take rings off.
Get hands dirty.
Mix all ingredients together.
Serve with Wheat Thins

You could use reduced fat cream cheese and wheat thins and this is a pretty dang healthy little appetizer!




Chicken and Broccoli Casserole VIA
1 lb. Chicken
1 Bag Frozen Chopped Broccoli (thawed) (I used family size)
1 Cream of Chicken Soup
3 TBSP Mayonaisse
Shredded Cheddar Cheese

Boil Chicken. (I added some salt, pepper, garlic salt and celery salt to water)
(Boil Broccoli as directed on bag if you want it a little more soft. If not bypass this step)
Mix Mayo and Cream of Chicken.
Shred Chicken.
Mix All Together in Casserole Dish.
(I also mixed in a little cheese)
Top with Shredded Cheddar.
Bake on 350 for 20 minutes.

I didn't use reduced fat anything on this and it was only 275 calories per serving (according to MyFitnessPal) and made about 4 good sized servings.
