Yesterday my parents came to town (bc they left to go to NYC this morning... not fair), so we had a little family cookout at the house. Kendol did all of the major cooking (bbq sandwiches, mac n cheese and baked beans) and I did the appetizer and a fun dessert. The appetizer is one of my all time favorites and is always a hit. The dessert is something new I tried and it turned out FAB-U-LOUS.
HOOTER DIP
(aka Buffalo Chicken Dip)
I'm sure most of you have had this or at least heard of it. But it's too fabulous not to share, just in case someone hasn't... so if you've never tried it, it's a MUST!
2 10oz. Cans of Chicken
(or about 2 Cups of shredded chicken if you want to cook your own)
(or you can shred up one of the pre-cooked rotisserie chickens from the grocery store)
1 bottle of Louisiana Hot Sauce
1 Cup of Ranch Dressing
2 8oz. Cream Cheeses
2 Cups of Shredded Cheddar
Fritos
Combine chicken and hot sauce in pan.
Add in ranch and cream cheese.
When it's all melted and cooked together add in half of the shredded cheddar.
Once it's all good and mixed together, put in a baking dish.
Cover with remaining shredded cheese.
Bake until cheese is melted and bubbly.
Serve with Fritos.
**Of course, you can decrease the amount of hot sauce you use, but around my house we aren't scared of a little hot sauce!!
Cake Batter Rice Krispie Treats
3 Tbsp of butter
1 10oz. Bag on Mini Marshmellows
1 Can of sprinkles
1/3 Cup of Cake Mix (I used Funfetti)
6 Cups of Rice Krispies Cereal
Melt butter is a skillet on low.
Add in Marshmellows.
When they are pretty melted, add in cake mix and 1/3 of sprinkles.
Add in 6 cups of Rice Krispies.
Mix well.
Transfer to a pan.
Press them in the pan and pack them together.
Cover with the rest of the sprinkles.
Let them cool a little while before cutting.
I also found it was easier to cut them with a spatula than a knife.
They turned out so freakin cute!! Perfect for a tailgate or birthday party. Especially for an Ole Miss tailgate (or any other red/blue school), being that they have red, white and blue sprinkles at the grocery store!!
O and p.s. I think everything for this cost $8 and it took maybe 5 minutes.
